15 small mint leaves
2 oz Marsh House Rum
.75 oz lime
.5 oz pure cane syrup
1.5 oz soda
Add mint and syrup to a Collins glass and stir briefly, pressing the leaves gently against the side of the glass. Be careful not to tear the leaves.
Add rum and citrus and slowly add ice while stirring about 1/4 of the ice at a time until full and the glass is frothy.
Top with soda and stir. Garnish with 5 sprigs of mint.
To make it pretty, add a dash of angostura bitters on top as well. Bitters are optional but quite good.
